Did your mom ever tell you, “don’t eat too many carrots; you’ll turn orange”? Well, it’s actually true. You could turn orange. Still, the benefits of those orange vegetables are super healthy. “The orange color in vegetables comes from a very powerful carotenoid antioxidant compound called beta-carotene.” It boosts the immune system, improves eyesight, it’s good for our reproductive system, and even has cancer-fighting components. They’re also low in calories.
Fall is great for these healthy orange vegetables, which are both delicious and nutritious: pumpkins, yams, butternut squashes, and sweet potatoes.
To help keep your Thanksgiving table healthy this year, we wanted to share a delicious orange recipe!
- 3 Large Sweet Potatoes, Washed and Scrubbed, Sliced into 1/8-inch Thick Slices
- 3 Tablespoons of Pumpkin Seeds, Lightly Crushed in a Food Processor
- ¼ Cup of Grapeseed Oil
- ¼ Tablespoon of Groun Cinnamon
- 1 Tablespoon of Chives, Minced
- 1 Glove of Garlic, Minced
- 1 Teaspoon of Cayenne Pepper
- A Pinch of Salt
- Preheat the oven to 375 degrees. Mix all ingredients in a bowl, and be sure to coat all sweet potato slices.
- Lay sweet potatoes out on a baking sheet
- Bake for 20 minutes, turning slices over halfway through
- Serve either alone or with hummus dip
